BOKOMO MUFFINS

600ml Bokomo Fibre Plus
300ml skim milk
125ml orange juice
2 large eggs separated
30ml Canola Oil
50ml Sugarbird Glace Citrus Peel
100ml raisins
75ml brown sugar
50ml Bokomo Quick Cooking Oats
10ml baking soda
10ml bicarbonate of soda
4 x 250ml Bokomo Bran Flakes
60ml Marmalade

Method:
Preheat the oven to 200 C or 400 F
Grease a muffin pan with cooking spray
Mix the Bokomo Fibre Plus and the skim milk in a large bowl (soak for 15min.)
Beat the oragnge juice, egg yolks and oil together
Add the Bokomo Fibre Plus mixture and mix well
Add the glace citrus peel and raisins, and mix
Mix the sugar, oats, baking powder and bicarbonate of soda together
then add to the mixture
Crush the bran flakes and add to mixture and mix well
Whip the egg whites until foaming and fold gently into mixture (DO NOT OVER MIX)
Fill each cavity of the muffin pan to half
Spoon 5ml marmalade on each
Top with remaining mixture
Decorate with citrus peel and raisins
Bake for 30min.
Transfer to wire rack and leave to cool

AARBEI KAASKOEK

1 Pak Bourdoir Beskuitjies in tertbord
Sprinkel met suurlemoensap
Sprinkel met vetvrye melk (om nat te maak)

Vulsel:

    500ml Aarbei jogurt
    2x bakkies (200g) vetvrye maaskaas
    2 e (30ml) Canderel versoeter poeier

    Meng alles deeglik
    Skep oor beskuitjielaag en verkoel

    Versier met vars aarbeie en 1 pakkie jellie van Low Call
    Skep oor die vulsel laag en verkoel oornag
